“Lovely looking pan”

I love my copper pan. I wanted something solid that would last me many years. This appears to be just what I was after. The pan remains an even heat extremely well. I've not pushed it yet, but it is a pleasure cooking my morning porridge in it. I've got the pan hanging up so I can enjoy the beautiful craftsmanship whenever I'm on the kitchen.

“Excellent craftsmanship, looks and functionality”

I have been pondering copper pots for some time. I bought the saucier after researching and finding the offer from Falk.
The few sauces I have done so far have demonstrated a pot where I could control the temperature very easily, the mass of the copper ensured a slow response with even heat distribution. I found “rolling” the pot allowed me to adjust heat going in and removing from the heat to whisk was effective due to the thermal mass of the pot. The shape accommodated several of my whisks with no sauce left immobile and unwhisked. The sauces were smooth and much easier to get good results of silky sauce.
The traditional looks are great, a piece of kitchen art.
I am very happy with my purchase and I am already eyeing my next piece which may be the larger saucier.

The 18cm Saucier Pan is wonderful!
It is a dream to cook with, I have prepared scrambled eggs, sauces and soups in the pan so far and they’ve all come out great. In my previous pans I would have to turn my hon up very hot to get things hot quickly, this pan heats up very quickly and evenly even on a lower heat setting.
The brushed copper is a lovey finish.
I highly recommended Faulk pans!

I have been undecided about which copper pans to get for some time, looking at Mauviel, Falk and others online. The only manufacturer that has a try it offer is Falk so I though I would try the 18cm saucier pan. It arrived a day or so later. Wow, the quality and weight of it told me I had made a good choice especially given it is 2.5mm thick whereas most Mauviel pans are 1.5mm available in the UK. I tried the pan out making a few sauces and some chicken gravy from stock. It was so controllable and the heat distribution so even, it was a pleasure to cook with. I now have a number of other pans from Falk. Very highly recommended!

This is my first copper pan but definitely not the last. I have used it for egg based sauces, rice and risotto, scrambled eggs, melting chocolate, etc. This little saucier excelled in all disciplines.

Thrilled to bits with my purchases, I was sorry I didn't know about the signature range when I ordered the classic saucier but never mind there's time to purchase some more from that range. My husband saw these pans on "how it's made" and was very impressed and encouraged me to try one out could not be more pleased with the results.

I bought 18cm saucier, and am delighted with it. Arrived safely, next day, and with full instructions to initiate use. It cooks quickly and with lower use of energy- and it is lovely to look at, and to hold. Am very chuffed and will add more Falk copper products to my kitchen collection over time. (Christmas presents already hinted !!)

Just cannot resist a bargain-18cm saucier pan at half price- just had to buy two!!
I’ve built my range of pots over the years and the smaller size pots are ideal fior the two of us - the larger units are great when the family arrive en-mass.

Ordered as a gift. I’ve been thanked and told that this pan is a joy to use. The conductivity is amazing and so even that scrambled eggs more or less cook themselves! Ditto porridge and risotto. Stirring on the rounded base is quite therapeutic and has the bonus of making cleaning easier. Probably the best feedback on a gift I’ve ever had!

I love my pans we bought! They look great, and cleaned up pretty easily too. Heats pretty quick and surprised how much they hold for a pan that was smaller to what we were used to. Perfect size for family of 4 as there is no waste at the end. Been recommending Falk cookware to friends.

This is the first piece of copper cookware I've spent my own money on for my home kitchen. I would have been happy if it had merely mildly improved the way I already do things, but actually it has enabled me to cook things in a different, much simpler and quicker way. I can now make hollandaise directly on the gas hob instead of over a bain marie - the heat is spread so evenly it's almost impossible for it to catch. Creme patissiere likewise - maximum heat and vigorous whisking for a minute, and it's the perfect size for a 26cm tin. I wouldn't be without this now, it's indispensable!

This pan is perfect for my sauces or scrambled eggs, mussles in wine, even small batches of currys etc.
It looks good and seems very well built and will probably outlive me.
The only request would be that the cast iron handle be coated/seasoned as it tends to form rust after washing now and then.

The combination of the perfect material, copper, and it’s rounded shape make this the best performing pan you can buy. Copper has almost twice the thermal conductivity of aluminium, resulting in an even heat all over the cooking surface. Perfect for cooking sauces/liquids prone to burning, such as caramel

Very speedy delivery, very well packed and an excellent product. It is the same good quality as the other items I have bought from Falk. I now have six or seven.
It makes the best scrambled egg. I like to add turmeric which stains other pans but this one is very easy to clean and does not stain. The handle does not get hot either,

I wish I had had one before, what a super pan. It has all the usual great qualities of Falk's pans but the clever design makes it special. Instead of a corner between the base the sides, there is a lovely gently curve, which a whisk can fit in or the curve of a spoon can scoop out all your culinary delights so no neglected under or overcooked food jammed in the corner. Perfect

I was worried when I purchased this pan that it would be too small. I soon found that looks are deceptive as it has become my most used pan! It just seems to be the right size for lots of things: making and reheating sauces, reheating leftovers, smaller dishes/portions. Its a good weight, very versatile and easy to clean....might need another one!

The pan has a nice weighty feel to it, I've cooked with it a few times now and it's brilliant for heating up fast to an even temperature all over the pan, so no hot spots. Which means dishes with sauces (or anything else) is much less likely to stick to the pan.
The stainless steel lining is easy to clean and i've decided to let the copper patinate a bit to see what it looks like. So far, so good. If I don't like it I can always polish it with the free polish Falk included, however so far, it makes the pan look more interesting.
All in all, I am extremely pleased with this and the other items I bought from Falk. I will be getting more....

1st bought this saucier as a try me offer truly impressed with its versatility for cooking up sauces and making scrambled eggs. this is one of my most used pans (on a daily basis).
So I just had to buy a second one to match his older brother, highly recommended, fantastic that I feel spoiled to NOW own two of them.
I have been buying Falk copper for the last couple of years and now and have built up a collection of 10 fantastic copper vessels along with 2 lids.

This was my first Falk purchase, tempted by the introductory offer. I'm now hooked! I had a copper saucepan many years ago with a tin or zinc lining and it was horrible to keep clean. This one is a joy. I'm convinced scrambled eggs taste better in it! The key, though, is to keep the heat right down. The eggs will still stick a bit but the pan is easy to clean

I bought this pan instead of my old milk pan and have been using it lots and not only to heat up the milk. The perfect size of the pan makes a great piece for cooking small meals for my toddler. It's also pretty light (compared to biggest copper pieces) and extremely versatile.

“The Perfect Pan!”

I've always loved copper pans, but until I found Falk they always had an air of the 'unobtainable' due to price and practicality. Well this year, I decided to take the plunge, and I'm SO GLAD I did! This saucier pan has become my new kitchen favourite! Not only does it look beautiful; it also renders the more complex recipes an absolute breeze due to its superb cooking performance and heat control. Hollandaise, bearnaise - all suddenly a piece of cake. I've even been able to mix up 'crystal-free' ice-cream by placing the copper-pan in a bowlful of crushed ice - the results are FAR BETTER than any ice-cream machine. I love it so much, I asked for another pan for Christmas, so the collection has started! Thank you Falk - you've taken my cooking to new heights. HIGHLY RECOMMENDED TO ALL!

This is my first piece of Culinaire and I am not disappointed. It performs better than I could have expected, so far for various sauces, scrambled eggs and creamed spinach. Perfect results every time. It retains the heat really well and cooks evenly.

I was hesitant to buy a saucier pan but having read so many good reviews and the great offer on it, I made the decision to buy it.
It has been so versatile and actually used more than the other pots I bought with it! For an xmas lunch, I made the cranberry sauce and the gravy in it. Sometimes when I am steaming potatoes or vegetable for two, I use the saucier and a lid from one of of the bigger pots as it is a much more manageable size.
It heats up very quickly and still looks in brand new condition - so very glad I went for the brushed finish with Falk than some of the other brands with a polished finish as I'm lazy!

So when researching Copper pans for his Christmas present I found your information invaluable when comparing other products and we have found that the Saucier Pan is completely perfect especially on the Aga as so many of the other pans fail miserably to compete. I have used my Falk pan just one time doing a sauce. The result was very good. I am an Italian cook and i can cook with all sorts of pans but I have to say that this Falk pan is not only beautiful to see but also very efficient in distribute the temperature evenly so that the food does not burn. Very satisfied with the product. It is also very easy to clean.

Customer service from Falk is incredible, any question, any query is answered very quickly and efficiently. This pan is solid but not too heavy, cooks beautifully and holds its heat. We have bought other brands but with the quality and customer service we will be increasing our pan collection.

Well, it's great for all the medium sized jobs like boiling a few spuds and stuff for two - a 20cm pan just makes the Gas Company happier in these circumstances. And on the intro offer, it's a steal.

The saucier looks fabulous and I'm sure will look even better once it has acquired a patina that only age can bring. It's a solid thing too - you wouldn't want to upset the cook when within arm's length of a swinging pan!
But the proof of the pudding (or in this case scrambled eggs) is in the eating and so, after conditioning the pan as instructed it was time to try out my favoured recipe.
The impressive heat conductivity of copper was immediately obvious and with just a lowish flame it was possible to get the eggs scrambling perfectly without sticking to the base as they always did with my previous egg-pan.
So, yes, the pan ticks all the boxes, as does the service from Falk Culinair. Easy to order, very professional courier delivery timed to within a 15-minute window the next day. I really can't fault anything.
Is it Christmas yet? I know what's on my list - more Falk copperware!

This was my first product as a 'starter offer' for a tryout and I am extremely happy with this product, very pretty in appearance, an excellent heat conductor and the way pan is curved making it easy to cook sauces in this pan.

I've had this pan for about 2 weeks now and is already a kitchen favourite and not just because of its good looks. Heat response just seems to be a bit sharper with this pan than our others and the robust stainless lining shows little evidence that I've used a metal whisk several times in it. The pan is actually a bit larger than I expected. Delivery was slick, the courier allowed me to pick my delivery day. Really happy with this purchase.

Made a superb bread sauce and also cranberry sauce with cherry brandy in it at Christmas and it was nothing short of excellent. I took it off the heat to let the spices for the bread sauce infuse and it still kept warm and produced a great result!! This is my first (but hopefully not the last) Falk pan I have bought.
The finish is excellent and it works like a charm.
I have made both Bearnaise and Hollandaise sauce in it and because of the copper you can really feel the temperature on the side of the pan.
It is so much easier to prevent overheating and thereby breaking the emulsion.
This will be my goto pan for for the delicate sauces containing butter emulsions!!!

This is my favourite pan I own. Though a Saucier pan, I use it for everything that doesn't require a large pan from making a quick custard, boiling eggs to sauces. Heats up amazingly and holds reduces sauces in no time. Even better I left it on the hob by accident for an hour which would have ruined a normal pan but this one just keeps going as though nothing happened. Can't recommend this enough!

This is the perfect pan for pasta sauce for two-three people in the evening and scrambling three to four eggs in the morning. The inner surface is super easy to clean and the outer copper requires no fussing. If I have any trouble cleaning the inside, filling the pan with some soapy water for an hour always does the trick. Simple. I highly recommend this pan, and all Faulk products generally.

After lots of research I settled on Falk Culinair copper pans, but the reality of the price led me to order this 18cm saucier on the introductory offer to try them out for myself. What great pans. This one in particular is perfect for that little sauce or gravy to accompany your meal, or warming through left-over casserole or risotto. It washes well and the brushed copper exterior looks fab even after many uses and washes. I've now ordered three more pieces and there's a fourth I have my eye on when I've saved up a bit!

I recently purchased my 18cm Saucier & absolutely love it - it does exactly what it promises to do: allow you to create perfect sauces every time. I have only had mine a few weeks and have already used it to make custards, creme patisserie and a pink grapefruit curd - making them in the saucier couldn't be easier because of the instant heat control.
I also love the looks of these beautiful copper pans - I clean mine religiously after each use to keep them looking fabulous!

I bought tne 18cm saucier pan on a deal as a cheaper way of trying a copper pan against the triple ply stainless steel pans that I use presently.Having now used the pan a few times I believe it does boil water as quickly as s/s using a lower gas setting. An important point given the high price of fuel and should over the years help to offset the initial pricey outlay.Its best point though, when making sauces it did not burn the butter. Something I have found easly done with s/s if you take your eye off it for one minute.

I bought this because it was on Sale and really didn't think about it much. When it came, I thought its a bit too small and wasn't so sure about it. Then I started using it and I have not stopped using it!! its brilliant for almost everything. I make porridge for my partner and I in the morning, then heat up the leftovers from the night before for lunch and make sauces, poach chicken fish, etc at night!! its big enough to make risotto for 2 people. My first copper pan, and it's perfect. Not only a great size for cooking for two, but no more hotspots! I've been stuck using electric burners instead of my preferred gas, and the even heat distribution has meant that I can quickly simulate changing temperature by moving the pan partway off the burner, without getting unevenly cooked food.
Will definitely be purchasing more copper cookware.

First I tried boiling water in this and a similar sized steel pan - the bubble pattern is noticeably different, maybe there is something beneficial to be gained from using copper pans, other than good looks. I think I can detect a difference from my use of the pan but it may just be my bias.
After about a years use the pan still appears new, without much fuss involved at the sink. It looks very nice on a shelf in my average sized kitchen which is now due for an extension to accommodate a few more of these pans - well I wouldn't wan't to have to put them in a cupboard...

following much on line research amongst competing copper pan manufacturers I decided upon Falk based upon its brushed copper finish and also the curved lip of the pan. I was not disappointed.After much caressing and enjoyment of its physique I finally put it to the test in making a crème anglaise for my sherry trifle. It cooked perfectly,evenly and quickly, all essential attributes at Xmas. It also poured without mess and spillage. So yes I have become a convert. The delivery was also impressive but I am not supposed to mention that!

Built like a tank, this little pan is brilliant. The surface is easy to clean, and the shape is ideal for sauce making.
This is the killer bechamel pan. If you cook on gas, this pan will reward you. Extremely responsive to temperature changes it allows you accurate control over what you are doing. For white sauces, gravies, jus reductions and so on it is just the business. I use it every day and love it, and unlike most other pans in my collection, it looks like I will not have to ever worry about replacing it. This is not a pretty piece to look shiny hanging from the ceiling, this is one serious cooking iron.

Clear website and competent administration for a "reasuringly expensive" 18 cm saucier pan. Fast delivery and safely packaged, the pan arrived as advertised and made a grand Christmas gift.
We have been using tinned copper pans for many years but it is now getting hard to have them re-tinned in the UK. You can never find a tinker when you need one!
The idea of a stainless steel lining was not entirely appealing but I love cooking with copper - it was a reasonable compromise.
I looked at Mauviel and various other brands. The Mauviel looked good but the low maintenance copper finish on the Falk finally decided me and I have no regrets - I will report back in a few decades on durability.

An exquisitely crafted pan. Beautiful to look at and cook in. I use it to make risottos, sauces, and gently sautéing onions.
This is my first copper pan, and I've justified to everyone that I bought it because it'll last forever (which it will), or that it'll do things my other pans won't (again, it will) but the truth is I bought this because I love it.
I spent three months researching, and decided that Falk was the way to go! Great customer service and super fast delivery.

This 18 cms saucier is a little beauty and is now a firm friend in my kitchen, 6 weeks old and getting nicely seasoned. Produces a perfect sauce, beautifully cooked with no rapid boiling patches or sticking, and cleans easily too. I have 'uhmmed and aahhed' for years over the benefits of copper pans - but no more - I'm well and truly converted.

This pan is a joy to use and the centrepiece for our regular Sunday scrambled eggs. They cook so much more evenly. The pans quick response to changes in heat is also great, and has saved me on many occasions when I've forgotten to put the toaster on and have had to take the pan of the heat for a couple of seconds. Thoroughly recommended!

Falk Culinair's Try Me Piece was my introduction into the world of copper cookware and it wasn't my last.
This a versatile piece in which I cook things like oatmeal, eggs (boiled/scrambled/fried/poached), steamed rice, pasta, bechamel-based sauces, tomato based-sauces and so on. It heats up and cools quickly giving you excellent control over whatever you cook.
Soaking it after use makes it a breeze to clean. Even after I accidentally left the remnants of a bechamel on a low heat for an hour, it only took a soak to help lift off the browned sauce.

I have been really impressed with this pan. It has a more solid feel than other copper pans I have used. The metal doesn't discolor as easily either.
This particular pan is great for the home cook making sauces, perfect size, and easy to stir with the rounded bottom.

I purchased this at the "try me" price - a very generous deal for a size and shape of pan that I'd always wanted. The quality of construction is impeccable.
It's a very versatile shape - perfect for pasta sauces, or a couple of portions of paella/risotto. The performance has been perfect - it's so easy to maintain an even heat, so saute-ing garlic or onions resembles the lovely bubbling you see professional chefs manage. Sauces stay in contact with the base rather than sliding around as they do in non-stick-coated pans, but don't catch on the base either - ideal.
Feels like a future heirloom - buy quality and buy once.

My pans range from an antique copper fish kettle, mid-range tri-copper to high-end Mauviel and Falk. The 18” gets regularly used for sauces - smooth bottomed so nothing stuck in the corner.
Heavy, and quick to heat - on my gas hob I get an even cooking temperature very with the iron handle staying cool.
My Falk compares favourably to the heavy gauge Mauviel; craftsman ship is fault-less, handle attached firmly in Brunellian fashion. Key advantage over its French companion is the finish does not tarnish as easily, the matt effect easy to maintain. Due to two babies in the house I once let my pan boil dry. I was able to easily remove the soot from the outside and burnt on béchamel remains from within without any marks.

I bought this pan as a trial prior to buying a full set. The pan is heavy and boils water very quickly. It cooks fast so turn down the heat. I tried all of the usual cleaning materials to stain the copper, all washed off with soap and water. Haven't tried to burn anything yet but I am sure I will succeed. Like the mat finish to look at and it does not need polishing.
Am so pleased am going to order several other pans to make the set. Would recommend this make.

With so much home cooking during lockdown, we decided to take the plunge into copper cookware. After some research, we went for this Falk 18cm saucier pan. Construction quality and finish is superb - from the interior brushed steel to the exterior copper and the cast iron handle. After seasoning the pan as suggested in FAQ section, I tried my hand at making some fluffy scrambled eggs and the results were perfect. It’s definitely the case that you will require less heat since the heat conduction through copper is so quick and efficient. Very happy with the purchase and looking forward to cooking more and adding to the collection!

I ordered the 18cm Saucier after reading most of the reviews.
I really am delighted with this pan, as with others, I made the best ever scrambled eggs.
Looking forward to making a white sauce.
The pan responds so beautifully to changes in heat from the burner.
I found there is no need to hold the handle while stirring as the weight of the pan holds itself on the burner. The handles do become very warm. I used an oven glove for comfort.
This is my 2nd purchase from Falk Culinaire and I can't fault their service.
I had a query which I sent in by email and it was answered very promptly.
My only wish, is that I had a need for more copper pans or cookware!

This was a spontaneous second purchase and I am so pleased that I did. I have yet to use this to make a roux etc, but quickly sauté-ing some prawns, bashing together some gravy and cooking through some asparagus and butter and I find it great. It is the perfect weight for one handed use, lovely shape that prevents any build up in the edges, and super easy to clean. I am thrilled with my two pans for Falk and will be purchasing more. My favourite thing to collect at the moment.

I have been using copper pots (tin coating) since many years. This pan is my first purchase at falk culinaire, I bought also the 18 cm copper lid.
This product is built for professional cooking: copper thickness (about 2mm) and excellent stainless coating.
I tried the pan by cooking a delicious risotto with cellery and carrots (I was used to cook risotto in a round pan made by alluminium). Heat propagation is outstanding, but the important aspect to consider is the professional coating. At this regard, you can't find a similar product at this price. Always buy the copper lid, it is very very important.

This is a very good quality item and a real thing of beauty. It stays on my cooker top on display and to be ready for action. Unfortunately I find it heavy and having a shoulder birth injury makes it difficult to handle. I have good quality stainless steel pans so don't need to buy more. But that probably won't hinder me! Since this arrived it has become my go to saucepan ideal for lots of uses. It works perfectly on the AGA boiling much more quickly and evenly than the AGA branded pans. Excellent shape and cleans easily.
This pan is an excellent investment as it will I imagine long outlast me! My teenage daughter always seems to use it too when she cooks.
Looking forward to adding to my collection.

Bought this pan for my wife as a 9th (copper!) anniversary gift. Wanted the very best quality copper pan available and did lots of research against other brands.
I was a bit concerned before purchase about the brushed copper finish because I thought it might detract from the aesthetic value - shiny copper looks so lovely. But the pan looks fantastic, and we have enjoyed all the benefits of cooking on copper. I also thought I would prefer a bronze handle to the standard cast iron on Falk pans, but the Falk handle looks good and doesn't get too hot to handle (unlike bronze).
I'd left the purchase late so the very fast delivery with a 'proper' courier (even giving a one hour window for delivery) rescued my anniversary intentions!
Overall, very impressed with product and service. Would suggest extending the range to offer polished copper as well so that the customer can choose.

This is a lovely pan, and my first introduction to Falk. It is incredibly responsive to heat changes, so it's really easy to control the cooking temperature. It cooks scrambled eggs to perfection, and makes reheating food really easy, without the need for constant stirring - just turn the heat down low, and let the pan do the work for you! And it looks lovely, and is easy to care for. What's not to like?

Have just taken delivery of my new Falk Saucier (18cm). It's a very attractive and extremely well made & finished piece of kit. Once seasoned I used it to make a garlic cream sauce to go with griddled garlic chicken breast and it did the job perfectly well - far easier and better than using a straight high sided s/s saucepan. Cleaned up without effort, dried with kitchen paper towel and hung up in it's new home next to my Falk Saute pan. Cant wait until I have a complete line of these beautiful pans.

A joy to use. The wight and balance gives it wonderful stability allowing you to stir with confidence that it wont move. The curved base made cleaning the base and corners easy as did the non stick surface; the sauce residues wiped off with no effort. I can't wait to use it again!

I have owned my first piece of Falk copperware for exactly 2 months now and it is already well used and well loved. Its weight and solidity inspire confidence and even my three teenagers have been tempted to experiment with everything from custard to curry (not at the same time - thankfully)and even with use it remains as aesthetically pleasing as it was new. I don't recall who said to only buy anything if it is either useful or beautiful - in this case, it is both!

I dare say I'm not the only one to have bought this one as it was a particularly favourable price (relatively speaking). Having used it a bit, I'm rather surprised how useful this particular size and shape is, and find it gets used a lot - eg frying up onions/garlic/spices for adding to something else, or for knocking up a bit of sauce, or heating up a single portion of something. It's high enough not to overflow, but being a bit lower than a saucepan it's slightly easier to stir things up. Usual benefits of stainless coated copper can't really be improved upon. A great little pan, and definitely worth adding to an order whilst it's on special offer, and a good size / shape regardless.

This is my first copper pan, I couldn't resist the amp;quot;try meamp;quot; pricing. I'd originally decided on a Mauviel splayed sautee, but fell in love with Falk's brushed look. Weight is perfectly balanced, the handle is very chunky and comfortable, and this 18cm size is perfect to cook for 1 or 2 people. The shape is wonderful for stirring e.g. risotto. I can see this becoming one of my most used pans.

To be perfectly honest, this was our first Falk purchase (combined with a 32cm frying pan)
Out of all our pans, we just can't stop using this one, as this is our first copper pan, the fast heating does need a 'little' getting used to but only after a short while we know the characteristics and all I can say this pan is a real joy to use, both my wife and I agree upon this, which is unheard of in my house. I feel it has a good solid quality weight behind it, easy to clean, great for the morning porridge to every day use. Impressed with the quality and feel. The very best bit, it was on an introductory offer ! Yippee

This is now the most used saucepan in my kitchen. Brilliant for all kinds of basic tasks like morning porridge for the kids. Seemingly indestructible, easy to clean, excellent heat conductivity and retention. Great stuff. One niggle: the handle is riveted on slightly wonky. Not so you can feel it in the balance, but you can see it if you look.

Made a superb bread sauce and also cranberry sauce with cherry brandy in it at Christmas and it was nothing short of excellent. I took it off the heat to let the spices for the bread sauce infuse and it still kept warm and produced a great result!! Have also used it for heating/warming through soups etc...such a versatile piece. Thanks Faulk Culinair. Customer service is exemplary and sets a standard that is rarely seen.

This is my first (but hopefully not the last) Falk pan I have bought.
The finish is excellent and it works like a charm.
I have made both Bearnaise and Hollandaise sauce in it and because of the copper you can really feel the temperature on the side of the pan.
It is so much easier to prevent overheating and thereby breaking the emulsion.
This will be my goto pan for for the delicate sauces containing butter emulsions!!!

This is my favourite pan I own. Though a Saucier pan, I use it for everything that doesn't require a large pan from making a quick custard, boiling eggs to sauces. Heats up amazingly and holds reduces sauces in no time. Even better I left it on the hob by accident for an hour which would have ruined a normal pan but this one just keeps going as though nothing happened. Can't recommend this enough!

This is the perfect pan for pasta sauce for two-three people in the evening and scrambling three to four eggs in the morning. The inner surface is super easy to clean and the outer copper requires no fussing. If I have any trouble cleaning the inside, filling the pan with some soapy water for an hour always does the trick. Simple. I highly recommend this pan, and all Faulk products generally.

After lots of research I settled on Falk Culinair copper pans, but the reality of the price led me to order this 18cm saucier on the introductory offer to try them out for myself. What great pans. This one in particular is perfect for that little sauce or gravy to accompany your meal, or warming through left-over casserole or risotto. It washes well and the brushed copper exterior looks fab even after many uses and washes. I've now ordered three more pieces and there's a fourth I have my eye on when I've saved up a bit!

I recently purchased my 18cm Saucier & absolutely love it - it does exactly what it promises to do: allow you to create perfect sauces every time. I have only had mine a few weeks and have already used it to make custards, creme patisserie and a pink grapefruit curd - making them in the saucier couldn't be easier because of the instant heat control.

“Copper or not”

I bought tne 18cm saucier pan on a deal as a cheaper way of trying a copper pan against the triple ply stainless steel pans that I use presently.Having now used the pan a few times I believe it does boil water as quickly as s/s using a lower gas setting. An important point given the high price of fuel and should over the years help to offset the initial pricey outlay.Its best point though, when making sauces it did not burn the butter. Something I have found easly done with s/s if you take your eye off it for one minute.

“the most useful little pan”

I bought this because it was on Sale and really didn't think about it much. When it came, I thought its a bit too small and wasn't so sure about it. Then I started using it and I have not stopped using it!! its brilliant for almost everything. I make porridge for my partner and I in the morning, then heat up the leftovers from the night before for lunch and make sauces, poach chicken fish, etc at night!! its big enough to make risotto for 2 people. Its absolutely brilliant!!!

My first copper pan, and it's perfect. Not only a great size for cooking for two, but no more hotspots! I've been stuck using electric burners instead of my preferred gas, and the even heat distribution has meant that I can quickly simulate changing temperature by moving the pan partway off the burner, without getting unevenly cooked food.
Will definitely be purchasing more copper cookware.

“Trying my first Falk pan”

First I tried boiling water in this and a similar sized steel pan - the bubble pattern is noticeably different, maybe there is something beneficial to be gained from using copper pans, other than good looks. I think I can detect a difference from my use of the pan but it may just be my bias.
After about a years use the pan still appears new, without much fuss involved at the sink. It looks very nice on a shelf in my average sized kitchen which is now due for an extension to accommodate a few more of these pans - well I wouldn't wan't to have to put them in a cupboard...

“Wonderful piece of cookware”

following much on line research amongst competing copper pan manufacturers I decided upon Falk based upon its brushed copper finish and also the curved lip of the pan. I was not disappointed.After much caressing and enjoyment of its physique I finally put it to the test in making a crème anglaise for my sherry trifle. It cooked perfectly,evenly and quickly, all essential attributes at Xmas. It also poured without mess and spillage. So yes I have become a convert. The delivery was also impressive but I am not supposed to mention that!

“Indispensable little pan”

Built like a tank, this little pan is brilliant. The surface is easy to clean, and the shape is ideal for sauce making.
This is the killer bechamel pan. If you cook on gas, this pan will reward you. Extremely responsive to temperature changes it allows you accurate control over what you are doing. For white sauces, gravies, jus reductions and so on it is just the business. I use it every day and love it, and unlike most other pans in my collection, it looks like I will not have to ever worry about replacing it. This is not a pretty piece to look shiny hanging from the ceiling, this is one serious cooking iron.

“Christmas gift”

Clear website and competent administration for a "reasuringly expensive" 18 cm saucier pan. Fast delivery and safely packaged, the pan arrived as advertised and made a grand Christmas gift.
We have been using tinned copper pans for many years but it is now getting hard to have them re-tinned in the UK. You can never find a tinker when you need one!
The idea of a stainless steel lining was not entirely appealing but I love cooking with copper - it was a reasonable compromise.
I looked at Mauviel and various other brands. The Mauviel looked good but the low maintenance copper finish on the Falk finally decided me and I have no regrets - I will report back in a few decades on durability.

Was impressed with delivery speed and quality of the saucier pan and the two lids I ordered. Have used several times and found them great to use,able to cook on lower gas settings and easy to keep clean. The curved sides are better than the standard pan types for stirring and mixing.

“Versatile little workhorse”

I use this pan pretty much on a daily basis, its so versatile. Anything from Béchamel sauce to baked beans or soft scrambled egg. Its easy to clean and a quick scrub with the scotchbrite pad makes it look like new again. I bought this as part of the "try me" special offer along with two other pans and a lid. Very satisfied with it, and will most certainly be adding to my growing collection!

An exquisitely crafted pan. Beautiful to look at and cook in. I use it to make risottos, sauces, and gently sautéing onions.
This is my first copper pan, and I've justified to everyone that I bought it because it'll last forever (which it will), or that it'll do things my other pans won't (again, it will) but the truth is I bought this because I love it.
I spent three months researching, and decided that Falk was the way to go! Great customer service and super fast delivery.

This 18 cms saucier is a little beauty and is now a firm friend in my kitchen, 6 weeks old and getting nicely seasoned. Produces a perfect sauce, beautifully cooked with no rapid boiling patches or sticking, and cleans easily too. I have 'uhmmed and aahhed' for years over the benefits of copper pans - but no more - I'm well and truly converted.
P.S. does a mean porridge as well!

This pan is a joy to use and the centrepiece for our regular Sunday scrambled eggs. They cook so much more evenly. The pans quick response to changes in heat is also great, and has saved me on many occasions when I've forgotten to put the toaster on and have had to take the pan of the heat for a couple of seconds. Thoroughly recommended!

Falk Culinair's Try Me Piece was my introduction into the world of copper cookware and it wasn't my last.
This a versatile piece in which I cook things like oatmeal, eggs (boiled/scrambled/fried/poached), steamed rice, pasta, bechamel-based sauces, tomato based-sauces and so on. It heats up and cools quickly giving you excellent control over whatever you cook.
Soaking it after use makes it a breeze to clean. Even after I accidentally left the remnants of a bechamel on a low heat for an hour, it only took a soak to help lift off the browned sauce.

I have been really impressed with this pan. It has a more solid feel than other copper pans I have used. The metal doesn't discolor as easily either.
This particular pan is great for the home cook making sauces, perfect size, and easy to stir with the rounded bottom.

I purchased this at the "try me" price - a very generous deal for a size and shape of pan that I'd always wanted. The quality of construction is impeccable.
It's a very versatile shape - perfect for pasta sauces, or a couple of portions of paella/risotto. The performance has been perfect - it's so easy to maintain an even heat, so saute-ing garlic or onions resembles the lovely bubbling you see professional chefs manage. Sauces stay in contact with the base rather than sliding around as they do in non-stick-coated pans, but don't catch on the base either - ideal.
Feels like a future heirloom - buy quality and buy once.

My pans range from an antique copper fish kettle, mid-range tri-copper to high-end Mauviel and Falk. The 18” gets regularly used for sauces - smooth bottomed so nothing stuck in the corner.
Heavy, and quick to heat - on my gas hob I get an even cooking temperature very with the iron handle staying cool.
My Falk compares favourably to the heavy gauge Mauviel; craftsman ship is fault-less, handle attached firmly in Brunellian fashion. Key advantage over its French companion is the finish does not tarnish as easily, the matt effect easy to maintain. Due to two babies in the house I once let my pan boil dry. I was able to easily remove the soot from the outside and burnt on béchamel remains from within without any marks.
